What is Kissa Philosophy?
The word Kissa (or Kissaten) has its roots in early 20th-century Japan. More than just a cafe, a Kissaten is a sanctuary.
While the modern world pushes us to rush and grab coffee in plastic to-go cups, the Kissa philosophy invites us to do the opposite:
  • The Necessary Pause: It's the art of stopping time to enjoy the aroma and the surroundings.
  • Attention to Detail: From the crockery to the background music, everything is designed for sensory delight.
  • Respect for the Ritual: Preparing coffee is not a mechanical process; it is a ceremony of hospitality and precision.

Specialty Coffee: Much more than a label 
We often hear the term "specialty coffee," but what does it really mean? It's not just marketing; it's a chain of excellence that guarantees you're drinking the best of the best.
For a coffee to be considered "specialty," it must meet three fundamental pillars:
  1. Certified Quality: The coffee is evaluated by expert tasters (Q-Graders) and must score above 80 on a 100-point scale. This ensures the absence of defects and superior flavor complexity.
  2. Traceability and Ethics: We know exactly who grew the beans, on which farm, at what altitude, and under what conditions. This guarantees fair payment to coffee growers and sustainable practices.
  3. Artisanal Roasting and Preparation: Unlike commercial coffee (which is over-roasted to hide defects), specialty coffee is carefully roasted to highlight its natural notes: fruity, floral, chocolatey, or citrusy.
